Susan Comte of The Root Seller had samples of this potato salad at the market today and it was yummy. Here's her recipe:
1 lb. potatoes
4 tbsp olive oil
1/2 tsp mustard
1 lemon juiced and zested
2 tbsp red wine vinegar
1 cup purslane
1/2 cup onion
1/2 cup calamata olives without pits
1 tsp mint
1 tsp oregano
